If you don&#8217;t have time to make it, you can use a bottle of store-bought <a href=\"https:\/\/www.justonecookbook.com\/mentsuyu\/\" data-wpel-link=\"internal\" target=\"_blank\" rel=\"noopener\">mentsuyu<\/a> available at Japanese or Asian grocery stores. Now, gather all the ingredients. <\/span><\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">To Make the Homemade Mentsuyu<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-56625-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Add <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-8 wprm-block-text-bold\">\u00bc cup sake<\/span> and  <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-9 wprm-block-text-bold\">\u00bd cup mirin<\/span> to a medium saucepan. Bring it to a boil over medium-high heat and let the alcohol evaporate for a few seconds. Then, add <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-10 wprm-block-text-bold\">\u00bd cup soy sauce<\/span> . <strong>Nami&#8217;s tip:<\/strong> I usually add an extra <span class=\"wprm-dynamic-quantity\">1<\/span> Tbsp mirin for my family\u2018s preference.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Add <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-11 wprm-block-text-bold\">1 piece kombu (dried kelp)<\/span> and <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-12 wprm-block-text-bold\">\u00bd\u20131 cup katsuobushi (dried bonito flakes)<\/span>. Use the maximum amount of katsuobushi for more intense bonito flavor.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Bring it to a boil and simmer on low heat for 5 minutes. Turn off the heat. Let it steep and cool completely. Strain the mentsuyu and set aside. <strong>Nami&#8217;s tip:<\/strong> You can keep this concentrated soup base in an airtight container and store it in the refrigerator for up to a month.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">To Boil the Soba Noodles<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-56625-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Boil a lot of water in a large pot. Unlike pasta, you <strong>do not add salt to the cooking water<\/strong>. Add <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-0 wprm-block-text-bold\">14 oz dried soba noodles (buckwheat noodles)<\/span> to the boiling water, distributing them around the pot in a circular pattern to separate the noodles from each other. Cook the noodles according to the package instructions. Stir occasionally so they don\u2019t stick to each other. The noodles are done when just tender; do not overcook. <strong>Reserve <span class=\"wprm-dynamic-quantity\">1\u20131\u00bd<\/span> cups of the cooking water<\/strong> called <em>sobayu<\/em> and set aside to enjoy at the end of the meal.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Drain the soba in a sieve and rinse them under cold running water with your hands to get rid of the excess starch. This is a very important step to keep the noodles from sticking to each other.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Shake the sieve to drain the water completely. Then, transfer the noodles to a large bowl of iced water. Chill the noodles for 30 seconds, drain well, and set aside.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">To Serve<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-56625-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Place bamboo sieves or mats over individual plates (to catch the draining water from the noodles). Place one serving of soba noodles on each mat and garnish with <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-5 wprm-block-text-bold\">shredded nori seaweed (kizami nori)<\/span> on top. <\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-3-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Prepare the soba dipping sauce using a 1-to-3 ratio of homemade mentsuyu to water. Combine <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-1 wprm-block-text-bold\">6 Tbsp mentsuyu (concentrated noodle soup base)<\/span> and <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-2 wprm-block-text-bold\">1\u215b cups iced water<\/span> in a measuring cup and <strong>check the taste<\/strong>. If it\u2018s salty, add more water, and if it\u2018s too dilute, add more mentsuyu. Divide the dipping sauce into individual cups.\u00a0<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-3-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Chop <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-4 wprm-block-text-bold\">2 green onions\/scallions<\/span> and put on individual small plates. Add a bit of <span class=\"wprm-inline-ingredient wprm-inline-ingredient-56625-6 wprm-block-text-bold\">wasabi<\/span> to the plates. Serve with the soba noodles and individual cups of dipping sauce. When you\u2019re done with the noodles, pour the reserved soba cooking water (sobayu) into the rest of the sauce in your dipping cup and enjoy it as a soup broth.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-56625-step-3-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">For a more substantial meal, enjoy this Zaru Soba with a variety of vegetables like mushrooms, carrots, daikon radish, and lettuce\/cabbage-based salads.
