It tastes even better than it looks, I swear. The real secret behind it is the hidden vegetable inside. Did you know that cocoa powder can dry out baked goods much more than flour? To compensate for this, we ensure there\u2019s plenty of added moisture in the cake batter.<\/p>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Let\u2019s review a few key ingredients:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Unsweetened Natural Cocoa Powder:<\/strong> Cocoa powder takes the place of some flour. Just as in my regular <a href=\"https:\/\/sallysbakingaddiction.com\/triple-chocolate-layer-cake\/\" rel=\"noopener\" target=\"_blank\">chocolate cake<\/a> recipe, make sure you\u2019re using natural unsweetened cocoa powder instead of Dutch-process cocoa powder.<\/li>\n<li><strong>Espresso Powder:<\/strong> Espresso powder accentuates the chocolate flavor. While optional, I highly recommend using it. The chocolate zucchini cake won\u2019t taste like coffee. Rather, the espresso powder helps bring out the intense chocolate flavor. We use it in <a href=\"https:\/\/sallysbakingaddiction.com\/double-chocolate-zucchini-bread\/\" target=\"_blank\" rel=\"noopener\">chocolate zucchini bread<\/a> and in this <a href=\"https:\/\/sallysbakingaddiction.com\/chocolate-cake-roll\/\" target=\"_blank\" rel=\"noopener\">chocolate cake roll<\/a>, too. You can find espresso powder in the coffee aisle at the grocery store or <a href=\"https:\/\/amzn.to\/2uVsb9R\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">online<\/a>.<\/li>\n<li><strong>Oil:<\/strong> Oil adds moisture. You can try replacing *some* of the oil with unsweetened applesauce. I\u2019ve done this with chocolate cakes and muffins and the result is wonderful, but I don\u2019t recommend replacing all of it. Despite the zucchini inside, this isn\u2019t health food, it\u2019s dessert. Don\u2019t try to make it into something it\u2019s not!<\/li>\n<li><strong>Eggs:<\/strong> 4 eggs bind everything together and add moisture.\u00a0Remember that <a href=\"https:\/\/sallysbakingaddiction.com\/baking-basics-room-temperature-ingredients\/\" rel=\"noopener\" target=\"_blank\">room-temperature ingredients<\/a> are important.<\/li>\n<li><strong>Sour Cream:<\/strong> Just like in <a href=\"https:\/\/sallysbakingaddiction.com\/chocolate-peanut-butter-cake\/\" target=\"_blank\" rel=\"noopener\">chocolate peanut butter cake<\/a>, you can use sour cream or plain yogurt. Either add moisture.<\/li>\n<li><strong>Zucchini:<\/strong> Use a whopping 3 cups of shredded zucchini in this recipe. Testing how much we can get away with\u2026 without actually tasting it! Zucchini is pure magic in cakes\u2014nothing but flavorless moisture. Same goes with my <a href=\"https:\/\/sallysbakingaddiction.com\/zucchini-bread\/\" rel=\"noopener\" target=\"_blank\">zucchini bread<\/a> and <a href=\"https:\/\/sallysbakingaddiction.com\/zucchini-muffins\/\" target=\"_blank\" rel=\"noopener\">zucchini muffins<\/a>, too!<\/li>\n<\/ul>\n<\/div>\n<p><strong>Optional Chocolate Chips:<\/strong> For mega chocolate flavor, add chocolate chips to the batter. They\u2019re key to those melty pockets of chocolate in each slice. Simply whisk the dry ingredients in one bowl and beat the wet ingredients together in another bowl. Combine the wet and dry ingredients, then add the chocolate chips. The cake batter will be slightly thick thanks to all of the zucchini! Divide the batter between two 9-inch cake pans; or you can make a quarter sheet cake using a 9\u00d713-inch cake pan. After 1 hour, remove the cakes from the pans, discard the parchment rounds, and let the cakes finish cooling directly on the rack.
