Hello! I really need your advice! I'm baking bread, and I'm doing great. But unfortunately, regardless of the chosen recipe and the temperature regime, I constantly have a problem with the bread breaking on the side. My oven is a regular gas oven with low heat. I place the grill in the middle of a glass pan on it and preheat the oven pan for 20 minutes, with the baking sheet facing down to ensure even heat distribution and prevent the bottom of the bread from burning. Before baking, I make cuts on the bread, then cover it with foil on top and bottom, and place the parchment inside.
