I made it up a bit but I cooked some onion, garlic and the courgettes. Added some mixed herbs, chilli flakes, lemon zest, some plant based cream cheese, and actual parmesan. Bit of pasta water, then mixed the pasta in, then folded in some wild rocket for extra flavour and greenery. It's delightful. submitted by /u/theavocadolady |
